1.面粉加水和成面团,最少醒1小时(我一般是前一天晚上和面,第二天早上用)

2.锅中烧热油倒入面粉中拌匀,制成油酥

3.和好的油酥,没有面粉颗粒较浓稠即可

4.所有卤肉材料放入锅中煮制1个小时,至猪肉酥烂入味(我都是提前一晚做好,第二天一早热一下,这样比较省时间)

5.醒好的面两面抹油放到硅胶垫上

卤肉可以换成卤牛肉、卤驴肉都可以,但要选择肥瘦相间的,肉太瘦口感发柴不好吃
